Weekend Prep - Optional

For the Shrimp Fajitas: Marinate Shrimp, slice onions and peppers.

For the Couscous Casserole: Assemble casserole.

For the Lambburgers: Shape patties

For the Stir Fry Beef with Basil: Place steak in freezer for 15 minutes and slice thinly.  Then marinate.  Make rice.

Slice mushrooms, peppers and onions. Cube chicken.

Club Sandwiches on Whole Wheat

Pre-cook bacon, slice cheddar.

Chicken Enchiladas

Cook Chicken. Assemble enchiladas in pan, but do not top with sauce and cheese until right before baking.
